Wine making

GRAPE HARVEST
The grapes are picked by hand, so that the very first selection of grapes takes place in the vineyard.

The grapes are collected into small crates to cover the short distance to the cellar keeping the full freshness of the fruit.

When the grapes arrive at the cellar the best bunches are selected on a table. Our modern equipment handles the grapes gently which helps to avoid bitterness.

WINE MAKING
The production tanks are small (1000, 3000, 6000 and 9000 litres). They are designed and equipped to keep the different terroirs and grape varieties separate during the wine-making process and fully express the qualities of all the individual plots.

AGEING
Ageing is carried out in 300 litre oak barrels in a cellar which is kept at a constant temperature and humidity.
During the ageing process we try to preserve and enhance the character and the nuances contributed by the different vineyards and terroirs. To achieve this we use 10 different barrel suppliers (five for the white wine and five for the red wine). Finally we keep and blend the best barrels in order to achieve wines with a subtle complexity and great personality.
