EDETARIA dolç 2012:

Wine made from Grenache 70% Syrah 30%, from our terroir “tapàs”. In Edetaria, we make a first grape harvest on September to produce our red wines. We leave just a few bunches of grapes (the smaller ones) that can be over ripen naturally. With those selected bunches of grapes we produce our sweet Edetaria wine. We harvest the latest we can, with a potential alcohol above 20º. The fermentation stops naturally when the wine arrives at 15º of natural alcohol. At this point, residual sugar is around 80-100gr/l. Afterwards, we age the wine during 8 months in 300 litres French oak barrels.

TASTING
Intense cherry red. Complex aromas. Black plums, fig jam, and spirited cherries, spicy, cinnamon. 

Poweful palate, smooth and full bodied, sweet and pleasant. Tannins, acidity, and alcohol, and sugar show a great balance. Fresh, it ends very long.

 

RECOMMENDED WITH

It's a perfect pairing for such different dishes as: chocolate coulant, dry cheese, and "maigret" on a raspberry sauce.
